Slow-Cooker Beef Verde

INGREDIENTS
- • 2 lbs. round steak, trimmed of all visible fat
- • 1/2 lb. small red potatoes, quartered
- • 1 large onion, chopped
- • 1/2 teaspoon each salt and pepper
- • 2 (15 oz) cans pinto beans, rinsed and drained
- • 1 (16 oz) jar salsa verde*
- • Optional: shredded cheese, sour cream, corn tortillas
INSTRUCTIONS
- Cut round steak into 1-inch pieces. Brown in a nonstick skillet that has been sprayed with cooking spray.
- Combine all ingredients into a slow-cooker. Add 1 cup of water and stir.
- Cook on low for 8 to 10 hours, or high for 4 to 5 hours.
- Serve with corn tortillas, shredded cheese, and sour cream, if desired.
