INGREDIENTS

  • 2 cups 1% milk
  • 1 cup uncooked regular grits
  • 1/2 teaspoon each salt and pepper
  • 2 cups Velveeta 2% cheese
  • 1 1/2 lbs. shredded smoked lean beef brisket
  • 2 cups prepared coleslaw
  • ¾ cup prepared barbecue sauce
  • *Purchase extra lean brisket, sauce and coleslaw from your favorite BBQ restaurant! We used HEB fully cooked pre-sliced mequite smoked lean brisket in the nutrition information

INSTRUCTIONS

  1. Bring milk and water to a low boil in a large saucepan over medium heat, stirring occasionally. Gradually whisk in grits and salt; return to a boil. Cover, reduce heat to low, and simmer, stirring occasionally, 5 to 7 minutes or until thickened. Remove from heat, and stir in cheese until blended.
  2. Layer grits, brisket and coleslaw evenly in 16 martini glasses; drizzle with barbecue sauce. Serve immediately.
