Hatch Green Chili Scramble

Breakfast

INGREDIENTS

  • 1 tablespoon butter
  • 1 cup diced red (new) potatoes
  • ¼ cup diced onion
  • ½ cups sliced fresh mushrooms
  • 1 cup diced lean ham
  • ¼ cup diced fresh roasted Hatch green chiles
  • 1 cup fresh baby spinach
  • 6 eggs, slightly beaten
  • ¼ teaspoon salt and pepper
  • 1 cup low-fat pepper jack cheese
  • Salsa, optional

INSTRUCTIONS

  1. In large non-stick skillet, melt butter over medium heat. Add potatoes, and brown in skillet for about 5 minutes. Add onion and mushrooms and cook for an additional 5 minutes or until all vegetables are tender.
  2. Add ham, green chiles, and spinach. Cook over low heat until spinach is just wilted. Add eggs and scramble until eggs are set.
  3. Sprinkle with cheese and serve with salsa, if desired.
