Fresh Green Bean Salad w/Blue Cheese & Toasted Walnuts

INGREDIENTS

  • 1 pound fresh green beans
  • 1 tablespoon white wine vinegar
  • 1 tablespoon vegetable oil
  • 1/2 cup diced red onion
  • 2 teaspoons grated lemon rind
  • 1/2 cup crumbled low fat blue cheese
  • 1/4 cup chopped walnuts, toasted

INSTRUCTIONS

  1. Wash green beans; trim ends, and remove strings
  2. Bring 1/2 cup water to a boil in a large saucepan; add beans. Cover, reduce heat to low, and cook 5 minutes, stirring occasionally.
  3. Drain immediately, and place in ice water. Let stand 5 minutes; drain well.
  4. Combine vinegar, oil, onion, and lemon rind in a jar; cover tightly, and shake vigorously.
  5. Pour mixture over bean; cover and chill at least 3 hours.
  6. Remove beans with a slotted spoon into serving bowl; top with blue cheese and walnuts.
