Fresh Green Bean Salad w/Blue Cheese & Toasted Walnuts
Salad
INGREDIENTS
- 1 pound fresh green beans
- 1 tablespoon white wine vinegar
- 1 tablespoon vegetable oil
- 1/2 cup diced red onion
- 2 teaspoons grated lemon rind
- 1/2 cup crumbled low fat blue cheese
- 1/4 cup chopped walnuts, toasted
INSTRUCTIONS
- Wash green beans; trim ends, and remove strings
- Bring 1/2 cup water to a boil in a large saucepan; add beans. Cover, reduce heat to low, and cook 5 minutes, stirring occasionally.
- Drain immediately, and place in ice water. Let stand 5 minutes; drain well.
- Combine vinegar, oil, onion, and lemon rind in a jar; cover tightly, and shake vigorously.
- Pour mixture over bean; cover and chill at least 3 hours.
- Remove beans with a slotted spoon into serving bowl; top with blue cheese and walnuts.
